Watercress, leek and coconut soup

This Summery soup comes from our friend Lee Holmes cookbook Heal Your Gut.

Lee says: " Watercress is a wonderful medicinal plant, which can help decrease inflammation and detoxify your entire body. Enjoy its fresh, earthy taste in this well-balanced, creamy blend." 

Serves 4


  • 1 brown onion diced
  • 1 garlic clove crushed
  • 1 leek, washed dried and finely sliced
  • 1 medium round turnip diced
  • 1 TBS Extra Virgin Coconut Oil
  • 85 g watercress rinsed  
  • 1 can coconut milk 270 ml (no additives)
  • 1 ½ cups vegetable stock
  • Pinch Celtic Sea Salt
  • Freshly Cracked Black Pepper


  • Melt coconut oil and sauté onion and garlic until transparent
  • Add turnip, watercress, leek, coconut milk and stock
  • Bring to boil, cover and simmer for 20 minutes
  • Blend in a processor
  • Season to taste and reheat if needed
