Veggie Sushi Recipe:



  • Step 1: Combine the rice and water in a large saucepan. Cover and bring to the boil over high heat. Reduce heat to very low and cook, covered, for 15 minutes or until all the water is absorbed. Set aside for 5 minutes to cool slightly. Place the rice in a large bowl. Use a wooden spoon or rice paddle to break up any lumps. 
  • Step 2: Add splash of apple cider vinegar and fold into the rice
  • Step 3: Chop the Avocado, cucumber, bell pepper and carrots into thin strips
  • Step 4: Place the nori wrap shiny-side down, on a clean work surface
  • Step 5: Use wet hands to spread rice over half of the nori sheet leaving a 2cm-wide border along the edge closest to you
  • Step 6: Spread and arrange the thin stripes of cucumber, bell pepper, carrots and avocado on the rice
  • Step 7: Roll the wrap firmly to enclose filling
  • Step 8: Cut each roll into 6 pieces.
  • Step 9: Serve with coconut aminos or tamari (optional)
