Quinoa Risotto

  • Preheat the oven to 180 C. 
  • Line a baking tray with baking paper. Spread out the cauliflower florets, drizzle with the sesame oil and sprinkle ranch seasoning. Bake for 40 mins, until slightly golden. 
  • Meanwhile, cook the quinoa risotto according to instructions. 
  • 5 mins before it is ready, throw in the spinach leaves and cook until wilted. 
  • Once ready, toss through the lentils and allow to cool. 
  • Plate and top with baked cauliflower, pomegranate, a wedge of lemon and salt and pepper to taste.
