Low Carb Kelp Noodle Pad Thai

If you are on the hunt for a new nutrient dense ingredient to incorporate into your cooking, look no further. Kelp noodles are high in nutrients and minerals and are a great alternative to pasta. The best part is that they require no cooking!

This recipe is the perfect thing to have in the summer time as it requires no hot stove and very little effort. It is fresh and very flavourful.  


Salad Ingredients:

  • 1 Package (340 g) of Kelp Noodles
  • 1 Red Bell Pepper
  • 1 Large Carrot, Peeled and Grated
  • Handful of Chopped Spring Onions
  • 1 Zucchini
  • Handful of Chopped Cashews


Creamy Dressing Ingredients:



  • Open kelp noodles and soak in water for 15-20 minutes while gently breaking them apart
  • Mix together the dressing ingredients, the longer it sits the more flavourful it will be
  • Chop all of the vegetables into thin strips
  • In a large bowl mix together the kelp noodles, chopped vegetables and sauce until thoroughly coated in sauce
  • Top with chopped cashews
