Delicious Hummus


Hummus is entirely made from beautiful plant-foods, including the magnificent chickpea which has been shown to stabilise blood sugar levels even the following day after consuming! Tahini is also a nutritious component of this age-old favourite, rich in calcium and iron. Here, ground coriander has been added for a refreshing twist, also bringing with it added antioxidants and healing properties for digestive discomfort.

Pair this nutrition-packed dip with fresh carrot sticks, healthy gluten-free pretzels and crackers for all the crunch without the nasties in this spring snacking platter for friends or family. 

Ingredients

  • 1 can chickpeas
  • 3 tbsp tahini
  • 2 tbsp water
  • 2 cloves garlic
  • 1 large lemon, juice only (approx 2 tbsp juice) 
  • 1.5 tsp coriander 
  • Salt and pepper

Instructions

  1. Combine all ingredients in a blender, adding more warm water as you need for desired consistency. Adjust salt and pepper to your tastes. 
  2. Spoon into an airtight container and store in the fridge.
