Fresh Quinoa Salad

Ingredients

recipe serves 2:

Salad:

  • 1 cup dry quinoa
  • 1 bell pepper
  • 1 shredded carrot
  • 2 beets
  • 1/2 cup peas
  • 1/2 cup lentils or chickpeas
  • 1 tbsp mingle spice
  • 4 cups mixed greens
  • 1 avocado

 

Dressing:

 

Instructions:

Salad:

  • Bring the water to a boil in a large saucepan.
  • Add the quinoa, stir once, and return to a boil. Cook uncovered, over medium heat for 12 minutes.
  • Strain and rinse well with cold water, shaking the sieve well to remove all moisture.
  • When dry, transfer the quinoa to a large bowl. Add spices and mix well.
  • Take a bowl and fill with salad greens, add the quinoa, peas, bell pepper, beet, lentils, carrots and avocado

 

Dressing:

  • Mix together lime, 1 tablespoon of dijon mustard and stir
  • Add apple cider vinegar and mix well till smooth

Pour dressing on salad and dig in
